Scope of 2.0 design (main branch):

Drop support for Airflow < 3.1
Start cutting-out complex features and document Kustomize
- ...then carve-out more into Kustomize incrementally
Drop DB Support and document "simple" Postgres container setup, use in own CI as well
Review possible update of Chart to default Helm (tool) version to 4.0
Consider Multiple Airflow in one k8s namespace use case
